Cinco de Mayo!



It might be Monday, a day for good behaviour and vegetable eating, but I don’t care, it’s the 5th of May, and having spent too much time hanging out with the lovely American Tanya in previous years, that means that today is a guacamole day!
            I’m not really sure about the roots of Cinco de Mayo, other than that it’s a Mexican celebration that’s upheld in the US and which justifies the scoffing of delicious Mexican food. What’s not to love?
            So, despite the best initial intentions today (swimming before work, lots of water being drunk and a very boring salad for lunch), once the working day ended I practically ran home to the promise of a delicious dinner.
            Guacamole is surprisingly expensive out here, so I picked up a portion of guac and chips from a local Mexican restaurant as it was the cheaper option to get my hands on the lovely green stuff, and I got lovely fresh tortilla chips thrown into the bargain too!
            I then used chicken bought and frozen after a Tekka Market trip many weeks ago, along with a stash of veggies that I had cooked off and frozen as pasta sauce in the past to whip up some meaty enchiladas, covered in cheese and jalapenos for good measure.
            It wasn’t healthy, but it was delicious, and that’s what May the 5th is all about. Apparently. According the to the Americans and Mexicans, and that's good enough for me!
